- Mutton mince - 250 grams
- Basmati rice - 100 grams
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Green chilies - 2, finely chopped
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Garam masala - 1 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Egg - 1, beaten
- Bread crumbs - 2 tablespoons
- Oil - for grilling
Steps
- Soak the basmati rice in water for 30 minutes, then drain and set aside.
- In a mixing bowl, combine mutton mince, finely chopped onion, ginger-garlic paste, green chilies, cilantro, mint leaves, garam masala, red chili powder, turmeric powder, salt, lemon juice, beaten egg, and bread crumbs. Mix well until all ingredients are thoroughly combined.
- Divide the mixture into equal portions and shape each portion into kebabs or patties.
- Preheat a grill or skillet over medium heat and brush lightly with oil.
- Grill the kebabs for about 5-7 minutes on each side or until they are cooked through and have a nice char.
- In a separate pot, bring water to boil, add the soaked basmati rice, and cook until 70% done. Drain the rice.
- Layer the partially cooked rice over the kebabs in the grill or skillet and cover for 10 minutes to allow flavors to meld.
- Remove from heat, serve the kebabs hot with raita or salad.
