Ingredients

  • Basmati rice - 200 grams
  • Mutton (bone-in, cut into pieces) - 300 grams
  • Onion (thinly sliced) - 1 large
  • Tomato (chopped) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Plain yogurt - 100 grams
  • Biryani masala - 1 tablespoon
  • Green chilies (slit) - 2
  • Fresh mint leaves - 10 grams
  • Fresh coriander leaves - 10 grams
  • Lemon juice - 1 tablespoon
  • Ghee (clarified butter) - 2 tablespoons
  • Oil - 2 tablespoons
  • Salt - to taste
  • Water - 500 ml
  • Whole spices (bay leaf, cloves, cardamom, cinnamon) - 1 each

Steps

  1. Soak the basmati rice in water for 30 minutes, then drain and set aside.
  2. In a large bowl, marinate the mutton with yogurt, ginger-garlic paste, biryani masala, lemon juice, and salt. Let it marinate for at least 30 minutes.
  3. Heat ghee and oil in a heavy-bottomed pot. Add sliced onions and fry until golden brown. Remove half for garnishing later.
  4. Add the marinated mutton to the pot and cook on medium heat for about 10-15 minutes until the mutton is browned.
  5. Add chopped tomatoes, green chilies, half of the mint, and coriander leaves. Cook until the tomatoes soften.
  6. Add the whole spices and water, then cover and simmer for 20 minutes until the mutton is tender.
  7. In a separate pot, bring water to a boil. Add the soaked rice and cook until it's 70% done. Drain the rice.
  8. Layer the partially cooked rice over the mutton mixture in the pot. Sprinkle the remaining mint, coriander, and fried onions on top.
  9. Cover the pot tightly and cook on low heat for 20-25 minutes to allow the flavors to meld and the rice to finish cooking.
  10. Once done, gently fluff the biryani with a fork and serve hot.
