Ingredients
- Basmati rice - 150 grams
- Mutton (bone-in, cut into pieces) - 300 grams
- Onion (sliced) - 1 large
- Tomato (chopped) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Yogurt - 100 grams
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Cloves - 4
- Green cardamom - 2
- Cinnamon stick - 1 small piece
- Bay leaf - 1
- Fresh cilantro (chopped) - 2 tablespoons
- Fresh mint leaves (chopped) - 2 tablespoons
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 400 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the cooking oil over medium heat. Add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for another minute until fragrant.
- Stir in the chopped tomatoes and cook until softened.
- Add the mutton pieces, turmeric powder, red chili powder, and salt. Cook for about 5 minutes until the mutton is browned on all sides.
- Mix in the yogurt, biryani masala, cumin seeds, cloves, cardamom, cinnamon, and bay leaf. Cook for another 10 minutes, stirring occasionally.
- Add 400 ml of water, bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes or until the mutton is tender.
- While the mutton is cooking, bring a separate pot of water to a boil. Add the soaked basmati rice and cook until it's 70% done (about 5-6 minutes). Drain the rice and set aside.
- Once the mutton is cooked, layer the partially cooked rice on top of the mutton in the pot. Sprinkle the chopped cilantro and mint over the rice.
- Cover the pot tightly and cook on low heat for another 10-15 minutes to allow the flavors to meld and the rice to finish cooking.
- Serve the Mutton Biryani Bowl hot, garnished with additional cilantro and mint if desired.
