Ingredients

  • Basmati rice - 150 grams
  • Mutton (bone-in, cut into pieces) - 300 grams
  • Onion (sliced) - 1 large
  • Tomato (chopped) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Yogurt - 100 grams
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Cloves - 4
  • Green cardamom - 2
  • Cinnamon stick - 1 small piece
  • Bay leaf - 1
  • Fresh cilantro (chopped) - 2 tablespoons
  • Fresh mint leaves (chopped) - 2 tablespoons
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 400 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the cooking oil over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add the ginger-garlic paste and sauté for another minute until fragrant.
  4. Stir in the chopped tomatoes and cook until softened.
  5. Add the mutton pieces, turmeric powder, red chili powder, and salt. Cook for about 5 minutes until the mutton is browned on all sides.
  6. Mix in the yogurt, biryani masala, cumin seeds, cloves, cardamom, cinnamon, and bay leaf. Cook for another 10 minutes, stirring occasionally.
  7. Add 400 ml of water, bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes or until the mutton is tender.
  8. While the mutton is cooking, bring a separate pot of water to a boil. Add the soaked basmati rice and cook until it's 70% done (about 5-6 minutes). Drain the rice and set aside.
  9. Once the mutton is cooked, layer the partially cooked rice on top of the mutton in the pot. Sprinkle the chopped cilantro and mint over the rice.
  10. Cover the pot tightly and cook on low heat for another 10-15 minutes to allow the flavors to meld and the rice to finish cooking.
  11. Serve the Mutton Biryani Bowl hot, garnished with additional cilantro and mint if desired.
