Ingredients

  • Basmati rice - 150 grams
  • Mutton (bone-in) - 300 grams
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Cooking oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Water - 400 milliliters

Steps

  1. Wash the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large bowl, mix the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, lemon juice, and salt. Marinate for at least 30 minutes.
  3. Heat the cooking oil in a heavy-bottomed pot over medium heat. Add the sliced onions and sauté until golden brown.
  4. Add the marinated mutton to the pot and cook until the mutton is browned on all sides, about 10 minutes.
  5. Stir in the chopped tomatoes, cilantro, and mint leaves, and cook until the tomatoes soften, about 5 minutes.
  6. Drain the soaked rice and add it to the pot. Gently stir to combine the rice with the mutton and spices.
  7. Pour in the water, ensuring the rice is fully submerged. Bring to a boil, then reduce heat to low, cover the pot, and let it cook for 25-30 minutes until the rice is cooked and the water is absorbed.
  8. Once cooked, remove from heat and let it sit covered for another 10 minutes. Fluff the biryani gently with a fork before serving.
