Ingredients

  • Mushrooms (button or cremini) - 300 grams
  • Onion (finely chopped) - 1 medium
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Ginger-garlic paste - 1 tablespoon
  • Green chili (finely chopped) - 1 small
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Chickpea flour (besan) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Oil (for brushing) - 1 tablespoon

Steps

  1. Preheat your grill or oven to medium-high heat (about 200°C or 400°F).
  2. Clean the mushrooms with a damp cloth and chop them coarsely.
  3. In a mixing bowl, combine the chopped mushrooms, onion, coriander leaves, ginger-garlic paste, green chili, cumin powder, coriander powder, garam masala, chickpea flour, lemon juice, salt, and black pepper.
  4. Mix everything thoroughly until the mushrooms are well coated with the spices and the mixture holds together.
  5. Take skewers and mold the mushroom mixture around them, forming elongated shapes, similar to traditional seekh kebabs.
  6. Brush the skewers lightly with oil to prevent sticking.
  7. Place the skewers on the grill or in the oven and cook for about 15-20 minutes, turning occasionally, until they are golden brown and cooked through.
  8. Once done, remove from the grill and let them rest for a few minutes before serving.
  9. Serve hot with mint chutney or your favorite dipping sauce.
