- Basmati rice - 1 cup
- Mushrooms (sliced) - 200 grams
- Onion (finely chopped) - 1 medium
- Tomato (chopped) - 1 medium
- Green chili (slit) - 1
- Ginger-garlic paste - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Bay leaf - 1
- Cloves - 2
- Cardamom pods - 2
- Cinnamon stick - 1 inch
- Vegetable broth or water - 2 cups
- Oil (cooking) - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves (for garnish) - a handful
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes and drain.
- Heat the oil in a large pan over medium heat. Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon stick, and sauté for about 1 minute until fragrant.
- Add the chopped onions and green chili to the pan, and cook until the onions turn golden brown, about 5-7 minutes.
- Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add the sliced mushrooms to the pan and cook for 5-6 minutes until they soften and release their moisture.
- Incorporate the chopped tomato and salt, cooking until the tomato breaks down and combines with the mushrooms, about 3-4 minutes.
- Add the soaked and drained basmati rice, gently mixing it with the mushroom mixture.
- Pour in the vegetable broth or water, bring to a boil, then reduce the heat to low, cover the pan, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the pan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh coriander leaves and serve hot.
