Ingredients

  • Basmati rice - 1 cup
  • Mushrooms (sliced) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Tomato (chopped) - 1 medium
  • Green chili (slit) - 1
  • Ginger-garlic paste - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cloves - 2
  • Cardamom pods - 2
  • Cinnamon stick - 1 inch
  • Vegetable broth or water - 2 cups
  • Oil (cooking) - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes and drain.
  2. Heat the oil in a large pan over medium heat. Add cumin seeds, bay leaf, cloves, cardamom, and cinnamon stick, and sauté for about 1 minute until fragrant.
  3. Add the chopped onions and green chili to the pan, and cook until the onions turn golden brown, about 5-7 minutes.
  4. Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  5. Add the sliced mushrooms to the pan and cook for 5-6 minutes until they soften and release their moisture.
  6. Incorporate the chopped tomato and salt, cooking until the tomato breaks down and combines with the mushrooms, about 3-4 minutes.
  7. Add the soaked and drained basmati rice, gently mixing it with the mushroom mixture.
  8. Pour in the vegetable broth or water, bring to a boil, then reduce the heat to low, cover the pan, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  9. Remove the pan from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh coriander leaves and serve hot.
