Steps
- Preheat the oven to 220°C (428°F).
- Rice the cauliflower using a food processor until it resembles fine crumbs.
- Steam the cauliflower for about 5 minutes until tender, then let it cool.
- Once cooled, squeeze out excess moisture from the cauliflower using a clean kitchen towel.
- In a bowl, mix the riced cauliflower, 100 grams of mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper until combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper to form a pizza crust, about 1 cm thick.
- Bake the crust for 15-20 minutes or until golden brown.
- While the crust is baking, heat olive oil in a pan over medium heat. Add chopped onions and sauté until translucent.
- Add the sliced mushrooms and cook until they release moisture and become tender.
- Stir in the tomato puree and garam masala, cooking for an additional 2-3 minutes. Season with salt to taste.
- Once the crust is ready, spread the mushroom masala mixture evenly over the crust.
- Top with the remaining mozzarella cheese and bake for another 10 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro before slicing and serving.
