Ingredients

  • Cauliflower - 400 grams
  • Mozzarella cheese - 150 grams
  • Parmesan cheese - 50 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Mushrooms (sliced) - 200 grams
  • Onion (finely chopped) - 1 small
  • Tomato puree - 100 grams
  • Garam masala - 1 teaspoon
  • Cilantro (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Rice the cauliflower using a food processor until it resembles fine crumbs.
  3. Steam the cauliflower for about 5 minutes until tender, then let it cool.
  4. Once cooled, squeeze out excess moisture from the cauliflower using a clean kitchen towel.
  5. In a bowl, mix the riced cauliflower, 100 grams of mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper until combined.
  6. Spread the cauliflower mixture onto a baking sheet lined with parchment paper to form a pizza crust, about 1 cm thick.
  7. Bake the crust for 15-20 minutes or until golden brown.
  8. While the crust is baking, heat olive oil in a pan over medium heat. Add chopped onions and sauté until translucent.
  9. Add the sliced mushrooms and cook until they release moisture and become tender.
  10. Stir in the tomato puree and garam masala, cooking for an additional 2-3 minutes. Season with salt to taste.
  11. Once the crust is ready, spread the mushroom masala mixture evenly over the crust.
  12. Top with the remaining mozzarella cheese and bake for another 10 minutes until the cheese is melted and bubbly.
  13. Garnish with chopped cilantro before slicing and serving.
