- Mushrooms - 400 grams, sliced
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Coconut cream - 100 ml
- Cheddar cheese - 50 grams, grated
- Olive oil - 1 tablespoon
- Fresh coriander - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they turn translucent.
- Add minced garlic, grated ginger, and chopped green chili. Sauté for another 2 minutes until fragrant.
- Stir in the sliced mushrooms, cooking until they soften and release their moisture, about 5-7 minutes.
- Add the pureed tomato, turmeric powder, cumin powder, garam masala, salt, and black pepper. Cook for another 5 minutes until the mixture thickens.
- Remove from heat and stir in the coconut cream and half of the grated cheddar cheese, mixing well.
- Transfer the mushroom mixture to a baking dish and spread it evenly.
- Top with the remaining grated cheddar cheese and bake in the preheated oven for 20 minutes or until the cheese is golden and bubbly.
- Garnish with fresh coriander before serving.
