Ingredients

  • Mushrooms - 400 grams, sliced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coconut cream - 100 ml
  • Cheddar cheese - 50 grams, grated
  • Olive oil - 1 tablespoon
  • Fresh coriander - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they turn translucent.
  3. Add minced garlic, grated ginger, and chopped green chili. Sauté for another 2 minutes until fragrant.
  4. Stir in the sliced mushrooms, cooking until they soften and release their moisture, about 5-7 minutes.
  5. Add the pureed tomato, turmeric powder, cumin powder, garam masala, salt, and black pepper. Cook for another 5 minutes until the mixture thickens.
  6. Remove from heat and stir in the coconut cream and half of the grated cheddar cheese, mixing well.
  7. Transfer the mushroom mixture to a baking dish and spread it evenly.
  8. Top with the remaining grated cheddar cheese and bake in the preheated oven for 20 minutes or until the cheese is golden and bubbly.
  9. Garnish with fresh coriander before serving.
