Ingredients

  • Mushrooms - 200 grams, sliced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Oil - 2 tablespoons
  • Salt - to taste
  • Water - 100 ml

Steps

  1. Heat the oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for 2-3 minutes until fragrant.
  4. Add the turmeric powder, coriander powder, and salt. Mix well and cook for another minute.
  5. Incorporate the sliced mushrooms into the pan and sauté for about 5 minutes until they start to soften.
  6. Pour in the pureed tomato and mix everything together. Cook for 5-7 minutes until the oil starts to separate from the mixture.
  7. Add the water and bring the masala to a gentle simmer. Cook for another 5 minutes.
  8. Stir in the garam masala and cook for 2 more minutes. Adjust salt if needed.
  9. Garnish with chopped cilantro before serving.
