Ingredients

  • Shirataki noodles - 200 grams
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Coconut milk - 150 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the Shirataki noodles under cold water and drain well. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the skillet, cooking for another 1-2 minutes until fragrant.
  4. Stir in the sliced mushrooms and cook for 5-7 minutes until they are tender and have released their moisture.
  5. Add the garam masala, turmeric powder, cumin powder, and coriander powder to the mushroom mixture. Stir well to coat the mushrooms with the spices.
  6. Pour in the coconut milk and bring the mixture to a gentle simmer. Reduce the heat and let it cook for 5-10 minutes until the sauce thickens slightly.
  7. Add the Shirataki noodles to the skillet, gently tossing them with the korma sauce until well combined. Cook for an additional 2-3 minutes to heat through.
  8. Taste and add salt as needed. Garnish with fresh cilantro before serving.
