- Cauliflower - 300 grams (for the crust)

- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Olive oil - 1 tablespoon

- Mixed herbs (oregano, basil) - 1 teaspoon
- Mushrooms (button or cremini) - 200 grams, sliced
- Onion - 1 small, finely chopped
- Tomato - 1 medium, diced
- Chettinad masala powder - 1 tablespoon
- Fresh coriander leaves - a handful, chopped
Steps
- Preheat the oven to 220°C (428°F).
- Rinse the cauliflower and chop it into florets. Steam or microwave until tender, then drain and let it cool slightly.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice. Place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a bowl, combine the riced cauliflower, mozzarella, Parmesan, egg, salt, pepper, and mixed herbs. Mix well to form a dough-like consistency.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
- While the crust is baking, heat olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
- Add the sliced mushrooms to the pan and cook until they release moisture and become tender, about 5-7 minutes.
- Stir in the diced tomato and Chettinad masala powder, cooking for an additional 3-4 minutes until the tomatoes soften. Remove from heat and set aside.
- Once the crust is done, remove it from the oven and spread the mushroom mixture evenly on top.
- Return the pizza to the oven and bake for another 5-7 minutes until the topping is heated through.
- Garnish with fresh coriander leaves before slicing and serving.
