Ingredients

  • Cauliflower - 300 grams (for the crust)
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mixed herbs (oregano, basil) - 1 teaspoon
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, diced
  • Chettinad masala powder - 1 tablespoon
  • Fresh coriander leaves - a handful, chopped

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Rinse the cauliflower and chop it into florets. Steam or microwave until tender, then drain and let it cool slightly.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice. Place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a bowl, combine the riced cauliflower, mozzarella, Parmesan, egg, salt, pepper, and mixed herbs. Mix well to form a dough-like consistency.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
  7. While the crust is baking, heat olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  8. Add the sliced mushrooms to the pan and cook until they release moisture and become tender, about 5-7 minutes.
  9. Stir in the diced tomato and Chettinad masala powder, cooking for an additional 3-4 minutes until the tomatoes soften. Remove from heat and set aside.
  10. Once the crust is done, remove it from the oven and spread the mushroom mixture evenly on top.
  11. Return the pizza to the oven and bake for another 5-7 minutes until the topping is heated through.
  12. Garnish with fresh coriander leaves before slicing and serving.
