- Basmati rice - 1 cup (200g)
- Mushrooms (sliced) - 200g
- Onion (thinly sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 inch piece
- Green chili (slit) - 1
- Cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Biryani masala - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Bay leaf - 1
- Cloves - 2
- Cardamom pods - 2
- Vegetable broth or water - 2 cups (500ml)
- Oil (coconut or vegetable) - 2 tablespoons
- Salt - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.
- Heat oil in a large pot over medium heat. Add cumin seeds, bay leaf, cloves, and cardamom pods; sauté until fragrant.
- Add sliced onions and sauté until golden brown. Then add minced garlic, grated ginger, and green chili; cook for 1-2 minutes.
- Stir in the chopped tomato, turmeric powder, and biryani masala. Cook until the tomato softens.
- Add the sliced mushrooms and cook until they release moisture and begin to brown, about 5 minutes.
- Add the soaked and drained rice to the pot, stirring gently to coat with the spices.
- Pour in the vegetable broth or water, and season with salt. Bring to a boil, then reduce heat to low.
- Cover the pot and simmer for 15 minutes or until the rice is cooked and all the liquid is absorbed.
- Remove from heat and let it sit covered for another 10 minutes. Fluff the biryani gently with a fork.
- Garnish with chopped cilantro and mint leaves before serving.
