Ingredients

  • Basmati rice - 1 cup (200g)
  • Mushrooms (sliced) - 200g
  • Onion (thinly sliced) - 1 medium
  • Tomato (chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 inch piece
  • Green chili (slit) - 1
  • Cilantro (chopped) - 2 tablespoons
  • Mint leaves (chopped) - 2 tablespoons
  • Biryani masala - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cloves - 2
  • Cardamom pods - 2
  • Vegetable broth or water - 2 cups (500ml)
  • Oil (coconut or vegetable) - 2 tablespoons
  • Salt - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.
  2. Heat oil in a large pot over medium heat. Add cumin seeds, bay leaf, cloves, and cardamom pods; sauté until fragrant.
  3. Add sliced onions and sauté until golden brown. Then add minced garlic, grated ginger, and green chili; cook for 1-2 minutes.
  4. Stir in the chopped tomato, turmeric powder, and biryani masala. Cook until the tomato softens.
  5. Add the sliced mushrooms and cook until they release moisture and begin to brown, about 5 minutes.
  6. Add the soaked and drained rice to the pot, stirring gently to coat with the spices.
  7. Pour in the vegetable broth or water, and season with salt. Bring to a boil, then reduce heat to low.
  8. Cover the pot and simmer for 15 minutes or until the rice is cooked and all the liquid is absorbed.
  9. Remove from heat and let it sit covered for another 10 minutes. Fluff the biryani gently with a fork.
  10. Garnish with chopped cilantro and mint leaves before serving.
