Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese - 100 grams
  • Parmesan cheese - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Rinse the cauliflower and cut it into florets. Steam or microwave it until tender, about 8-10 minutes.
  3. Drain the cauliflower and let it cool slightly, then transfer to a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, oregano, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  7. While the crust is baking, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are soft.
  8. Add the cumin, coriander, and chili powder to the mushrooms, stirring well to combine. Cook for an additional 2-3 minutes until the spices are fragrant.
  9. Remove the crust from the oven, top it with the spiced mushrooms evenly, and return it to the oven for another 5 minutes.
