Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese - 100 grams
- Parmesan cheese - 30 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Mushrooms (button or cremini) - 200 grams, sliced
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (428°F).
- Rinse the cauliflower and cut it into florets. Steam or microwave it until tender, about 8-10 minutes.
- Drain the cauliflower and let it cool slightly, then transfer to a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, oregano, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto a lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are soft.
- Add the cumin, coriander, and chili powder to the mushrooms, stirring well to combine. Cook for an additional 2-3 minutes until the spices are fragrant.
- Remove the crust from the oven, top it with the spiced mushrooms evenly, and return it to the oven for another 5 minutes.
- Once done, remove from the oven, garnish with fresh cilantro, slice, and serve hot.
