Ingredients

  • Moong dal (split yellow lentils) - 100 grams
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Green chili - 1, finely chopped (optional)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the moong dal under cold water until the water runs clear.
  2. In a pot, add the rinsed moong dal and enough water to cover it by about 2 inches. Bring to a boil.
  3. Reduce the heat and simmer for about 15-20 minutes, or until the dal is tender but not mushy. Drain any excess water and let it cool.
  4. In a large bowl, combine the diced cucumber, tomato, red onion, and green chili.
  5. Add the cooled moong dal to the bowl with the vegetables.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  7. Pour the dressing over the salad and mix well to combine.
  8. Garnish with chopped coriander leaves and serve immediately or chill in the refrigerator for 15 minutes before serving.
