- Moong dal (split yellow lentils) - 100 grams
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red onion - 1 small, finely chopped
- Green chili - 1, finely chopped (optional)
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the moong dal under cold water until the water runs clear.
- In a pot, add the rinsed moong dal and enough water to cover it by about 2 inches. Bring to a boil.
- Reduce the heat and simmer for about 15-20 minutes, or until the dal is tender but not mushy. Drain any excess water and let it cool.
- In a large bowl, combine the diced cucumber, tomato, red onion, and green chili.
- Add the cooled moong dal to the bowl with the vegetables.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
- Pour the dressing over the salad and mix well to combine.
- Garnish with chopped coriander leaves and serve immediately or chill in the refrigerator for 15 minutes before serving.
