Ingredients

  • Moong dal (split yellow lentils) - 1 cup
  • Water - 1.5 cups (for soaking and blending)
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon (or to taste)
  • Oil - 2 tablespoons (for cooking)
  • Onion - 1 small, finely chopped (optional)

Steps

  1. Rinse the moong dal under running water and soak it in water for at least 2 hours.
  2. After soaking, drain the moong dal and transfer it to a blender. Add 1.5 cups of water and blend until you get a smooth batter.
  3. In a mixing bowl, combine the blended moong dal with grated ginger, chopped green chili, coriander leaves, cumin powder, turmeric powder, salt, and chopped onion (if using). Mix well to form a smooth batter.
  4. Heat a non-stick pan or griddle over medium heat and add 1/2 tablespoon of oil.
  5. Pour a ladleful of the batter onto the pan and spread it into a circular shape, about 1/4 inch thick.
  6. Cook for 2-3 minutes until the edges start to lift and the bottom is golden brown, then flip and cook for another 2-3 minutes on the other side.
  7. Repeat this process for the remaining batter, adding more oil as necessary.
  8. Serve hot with chutney or yogurt.
