Ingredients

  • Sprouted moth beans - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger-Garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Curry leaves - 6-8 leaves
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Lemon wedges - for serving
  • Pav (bread rolls) - 4 pieces
  • Sev (crispy chickpea noodles) - for topping

Steps

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  2. Add curry leaves, chopped onions, and green chili. Sauté until the onions are translucent.
  3. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  4. Add the pureed tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the mixture.
  5. Add the sprouted moth beans and mix well. Pour in enough water to cover the beans, and bring to a boil.
  6. Reduce the heat, cover the pan, and let it simmer for about 15-20 minutes until the beans are tender.
  7. Add garam masala and adjust seasoning as needed. Cook for another 2-3 minutes.
  8. Serve hot, garnished with chopped coriander leaves, alongside lemon wedges and topped with sev.
  9. Toast the pav rolls on a skillet with a little butter until golden brown.
