- Sprouted moth beans - 200 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger-Garlic paste - 1 tablespoon
- Green chili - 1, slit
- Curry leaves - 6-8 leaves
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
- Lemon wedges - for serving
- Pav (bread rolls) - 4 pieces
- Sev (crispy chickpea noodles) - for topping
Steps
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add curry leaves, chopped onions, and green chili. Sauté until the onions are translucent.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Add the pureed tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the mixture.
- Add the sprouted moth beans and mix well. Pour in enough water to cover the beans, and bring to a boil.
- Reduce the heat, cover the pan, and let it simmer for about 15-20 minutes until the beans are tender.
- Add garam masala and adjust seasoning as needed. Cook for another 2-3 minutes.
- Serve hot, garnished with chopped coriander leaves, alongside lemon wedges and topped with sev.
- Toast the pav rolls on a skillet with a little butter until golden brown.
