Ingredients

  • Basmati rice - 1 cup
  • Fresh mint leaves - 1/2 cup, chopped
  • Fresh coriander leaves - 1/4 cup, chopped
  • Onion - 1 medium, thinly sliced
  • Green chili - 1, slit
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon (to taste)
  • Vegetable oil - 2 tablespoons
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  3. Add the sliced onion and sauté until it turns golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili. Sauté for 1-2 minutes until fragrant.
  5. Add the chopped mint and coriander leaves, turmeric powder, and salt. Cook for another 2 minutes, stirring well.
  6. Add the soaked and drained rice to the pan and mix gently to combine with the spices and herbs.
  7. Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  8. Turn off the heat and let the rice sit covered for 5 minutes. Fluff with a fork before serving.
