- Basmati rice - 1 cup
- Fresh mint leaves - 1/2 cup, chopped
- Fresh coriander leaves - 1/4 cup, chopped
- Onion - 1 medium, thinly sliced
- Green chili - 1, slit
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon (to taste)
- Vegetable oil - 2 tablespoons
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add the sliced onion and sauté until it turns golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili. Sauté for 1-2 minutes until fragrant.
- Add the chopped mint and coriander leaves, turmeric powder, and salt. Cook for another 2 minutes, stirring well.
- Add the soaked and drained rice to the pan and mix gently to combine with the spices and herbs.
- Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Turn off the heat and let the rice sit covered for 5 minutes. Fluff with a fork before serving.
