- Whole wheat flour - 50 grams
- Fresh methi leaves (fenugreek) - 30 grams, chopped
- Ghee (clarified butter) - 20 grams
- Unsweetened almond milk - 100 ml
- Erythritol (or preferred sweetener) - 15 grams
- Cardamom powder - 1/4 teaspoon
- Chopped nuts (almonds, pistachios) - 10 grams
- Salt - a pinch
Steps
- In a mixing bowl, combine the whole wheat flour, chopped methi leaves, and a pinch of salt.
- Add the ghee to the mixture and rub it in with your fingers until the mixture resembles coarse crumbs.
- Gradually add the almond milk while kneading the dough until it is smooth. Let it rest for 10 minutes.
- Divide the dough into two equal portions and roll each portion into a flat circle (thepla) about 5-6 inches in diameter.
- Heat a non-stick skillet over medium heat and cook each thepla for about 2-3 minutes on each side until golden brown.
- Once cooked, crumble the thepla into small pieces and place them back in the skillet.
- Add erythritol, cardamom powder, and a little extra ghee to the crumbled thepla, mixing well until everything is combined and warmed through.
- Garnish with chopped nuts and serve warm.
