Ingredients

  • Whole wheat flour - 50 grams
  • Fresh methi leaves (fenugreek) - 30 grams, chopped
  • Ghee (clarified butter) - 20 grams
  • Unsweetened almond milk - 100 ml
  • Erythritol (or preferred sweetener) - 15 grams
  • Cardamom powder - 1/4 teaspoon
  • Chopped nuts (almonds, pistachios) - 10 grams
  • Salt - a pinch

Steps

  1. In a mixing bowl, combine the whole wheat flour, chopped methi leaves, and a pinch of salt.
  2. Add the ghee to the mixture and rub it in with your fingers until the mixture resembles coarse crumbs.
  3. Gradually add the almond milk while kneading the dough until it is smooth. Let it rest for 10 minutes.
  4. Divide the dough into two equal portions and roll each portion into a flat circle (thepla) about 5-6 inches in diameter.
  5. Heat a non-stick skillet over medium heat and cook each thepla for about 2-3 minutes on each side until golden brown.
  6. Once cooked, crumble the thepla into small pieces and place them back in the skillet.
  7. Add erythritol, cardamom powder, and a little extra ghee to the crumbled thepla, mixing well until everything is combined and warmed through.
  8. Garnish with chopped nuts and serve warm.
