Ingredients

  • Basmati rice - 1 cup (200g)
  • Fresh methi (fenugreek) leaves - 1 cup (30g), chopped
  • Onion - 1 medium (100g), finely sliced
  • Tomato - 1 medium (100g), chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon (5g), grated
  • Garlic - 2 cloves (6g), minced
  • Cumin seeds - 1 teaspoon (5g)
  • Turmeric powder - 1/2 teaspoon (2g)
  • Garam masala - 1/2 teaspoon (2g)
  • Salt - to taste
  • Oil (preferably vegetable or coconut) - 2 tablespoons (30ml)
  • Water - 2 cups (480ml)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the sliced onion and sauté until they turn golden brown, about 5-7 minutes.
  4. Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 1-2 minutes until fragrant.
  5. Add the chopped tomato, turmeric powder, and salt, cooking until the tomato softens, about 3-4 minutes.
  6. Add the chopped methi leaves and sauté for 2-3 minutes until they wilt down.
  7. Drain the soaked rice and add it to the pan, stirring gently to combine with the spices and methi mixture.
  8. Pour in the water and add garam masala. Bring it to a boil, then cover the pan and reduce the heat to low.
  9. Cook for 15-20 minutes or until the rice is tender and all the water is absorbed.
  10. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. Serve hot.
