Ingredients
- Basmati rice - 1 cup (200g)
- Fresh methi (fenugreek) leaves - 1 cup (30g), chopped
- Onion - 1 medium (100g), finely sliced
- Tomato - 1 medium (100g), chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon (5g), grated
- Garlic - 2 cloves (6g), minced
- Cumin seeds - 1 teaspoon (5g)
- Turmeric powder - 1/2 teaspoon (2g)
- Garam masala - 1/2 teaspoon (2g)
- Salt - to taste
- Oil (preferably vegetable or coconut) - 2 tablespoons (30ml)
- Water - 2 cups (480ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the sliced onion and sauté until they turn golden brown, about 5-7 minutes.
- Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 1-2 minutes until fragrant.
- Add the chopped tomato, turmeric powder, and salt, cooking until the tomato softens, about 3-4 minutes.
- Add the chopped methi leaves and sauté for 2-3 minutes until they wilt down.
- Drain the soaked rice and add it to the pan, stirring gently to combine with the spices and methi mixture.
- Pour in the water and add garam masala. Bring it to a boil, then cover the pan and reduce the heat to low.
- Cook for 15-20 minutes or until the rice is tender and all the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. Serve hot.
