Ingredients
- Basmati rice - 1 cup
- Fresh methi (fenugreek) leaves - 1 cup, chopped
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Ginger-garlic paste - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 2 cups
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a pan, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add sliced onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
- Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
- Mix in the chopped methi leaves and sauté for 2-3 minutes until wilted.
- Add the soaked basmati rice and gently mix to combine with the spices.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15-18 minutes or until the rice is cooked and water is absorbed.
- Once done, fluff the rice gently with a fork and sprinkle garam masala over it.
- Garnish with fresh coriander leaves and serve hot.
