Ingredients

  • Basmati rice - 1 cup
  • Fresh methi (fenugreek) leaves - 1 cup, chopped
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Ginger-garlic paste - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Water - 2 cups
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a pan, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
  5. Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  6. Mix in the chopped methi leaves and sauté for 2-3 minutes until wilted.
  7. Add the soaked basmati rice and gently mix to combine with the spices.
  8. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15-18 minutes or until the rice is cooked and water is absorbed.
  9. Once done, fluff the rice gently with a fork and sprinkle garam masala over it.
  10. Garnish with fresh coriander leaves and serve hot.
