Ingredients

  • Rice flour - 1 cup
  • Besan (gram flour) - 1/4 cup
  • Fresh methi (fenugreek leaves) - 1 cup, chopped
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Water - as needed
  • Oil - for cooking
  • Yogurt - 2 tablespoons (for serving)
  • Pickle - 2 tablespoons (for serving)

Steps

  1. In a mixing bowl, combine rice flour, besan, chopped methi leaves, turmeric powder, cumin powder, red chili powder, and salt.
  2. Gradually add water and knead the mixture into a smooth and pliable dough.
  3. Divide the dough into 4 equal portions and shape them into balls.
  4. Dust a flat surface with rice flour and roll each ball into a thin circle (paratha).
  5. Heat a non-stick skillet over medium heat and add a little oil.
  6. Place the rolled paratha on the skillet and cook for about 2-3 minutes on each side, adding oil as needed until golden brown.
  7. Remove the paratha from the skillet and keep it warm in a cloth.
  8. Repeat with the remaining dough portions.
  9. To serve, place a paratha on a plate, add a dollop of yogurt and some pickle, and roll it up.
