Ingredients

  • Fresh fenugreek leaves - 100 grams
  • Chickpea flour (besan) - 100 grams
  • Rice flour - 20 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Water - as needed
  • Oil - for deep frying

Steps

  1. Wash and chop the fresh fenugreek leaves and set aside.
  2. In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, turmeric powder, red chili powder, and salt.
  3. Add the finely chopped onion, green chili, and grated ginger to the flour mixture.
  4. Mix in the chopped fenugreek leaves until well coated with the flour.
  5. Gradually add water to form a thick batter, ensuring it is not too runny.
  6. Heat oil in a deep frying pan over medium heat.
  7. Once the oil is hot, drop spoonfuls of the batter into the oil, being careful not to overcrowd the pan.
  8. Fry the pakoras until they are golden brown and crispy, about 3-4 minutes on each side.
  9. Remove the pakoras using a slotted spoon and drain them on paper towels.
  10. Serve hot with mint chutney or ketchup.
