Ingredients

  • Fresh fenugreek leaves - 100 grams
  • Firm tofu - 200 grams
  • Coconut cream - 100 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1-inch piece, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Vegetable oil - 1 tablespoon
  • Water - 100 ml

Steps

  1. Wash the fenugreek leaves thoroughly, chop them coarsely, and set aside.
  2. Cube the firm tofu and lightly sauté it in a non-stick pan with a bit of oil until golden brown. Remove and set aside.
  3. In the same pan, add vegetable oil and heat it over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onion and sauté until it turns translucent.
  5. Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
  6. Add turmeric powder, coriander powder, and salt. Mix well and cook for 1-2 minutes.
  7. Add the chopped fenugreek leaves and sauté until they wilt.
  8. Pour in the coconut cream and water, stirring to combine. Bring it to a gentle simmer.
  9. Add the sautéed tofu and garam masala to the pan. Mix gently and let it cook for another 5 minutes, allowing the flavors to meld.
  10. Serve hot with rice or flatbread.
