Ingredients

  • Fresh methi leaves (fenugreek) - 100 grams
  • Coconut milk - 200 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a large pot over medium heat.
  2. Add cumin seeds and let them splutter for a few seconds.
  3. Add the finely chopped onion, and sauté until translucent.
  4. Stir in minced garlic, grated ginger, and slit green chili, cooking for an additional 2 minutes until fragrant.
  5. Add turmeric powder and mix well.
  6. Incorporate the fresh methi leaves and sauté for about 5 minutes until they wilt.
  7. Pour in the vegetable broth and bring the mixture to a boil.
  8. Reduce the heat and let it simmer for 10 minutes.
  9. Add coconut milk and season with salt and black pepper, stirring well.
  10. Simmer for another 5 minutes, then remove from heat.
  11. Blend the soup until smooth, if desired, for a creamier texture.
  12. Stir in lemon juice before serving.
