- Chicken breast - 200 grams, diced
- Fresh fenugreek leaves (methi) - 1 cup, chopped
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit (optional)
- Coconut milk - 200 ml
- Chicken broth - 500 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Garam masala - 1/4 teaspoon
- Fresh cream - 2 tablespoons (for garnish)
- Lemon juice - 1 tablespoon
Steps
- Heat olive oil in a pot over medium heat. Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and green chili. Sauté for another 2 minutes until fragrant.
- Add the diced chicken breast to the pot. Cook until the chicken is browned on all sides.
- Stir in chopped fenugreek leaves, coriander powder, salt, and black pepper. Cook for 2-3 minutes until the fenugreek wilts.
- Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
- Add coconut milk and garam masala, stirring well. Simmer for an additional 5 minutes.
- Remove from heat and add lemon juice. Adjust seasoning as needed.
- Blend the soup with an immersion blender for a creamy texture, or leave it chunky as per your preference.
- Serve hot, garnished with a swirl of fresh cream.
