Ingredients

  • Chicken breast - 200 grams, diced
  • Fresh fenugreek leaves (methi) - 1 cup, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit (optional)
  • Coconut milk - 200 ml
  • Chicken broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Garam masala - 1/4 teaspoon
  • Fresh cream - 2 tablespoons (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a pot over medium heat. Add chopped onions and sauté until they turn golden brown.
  2. Add minced garlic, grated ginger, and green chili. Sauté for another 2 minutes until fragrant.
  3. Add the diced chicken breast to the pot. Cook until the chicken is browned on all sides.
  4. Stir in chopped fenugreek leaves, coriander powder, salt, and black pepper. Cook for 2-3 minutes until the fenugreek wilts.
  5. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  6. Add coconut milk and garam masala, stirring well. Simmer for an additional 5 minutes.
  7. Remove from heat and add lemon juice. Adjust seasoning as needed.
  8. Blend the soup with an immersion blender for a creamy texture, or leave it chunky as per your preference.
  9. Serve hot, garnished with a swirl of fresh cream.
