Ingredients
- Besan (gram flour) - 1 cup
- Fresh methi leaves (fenugreek) - 1/2 cup, chopped
- Yogurt - 1/2 cup
- Water - 1/2 cup
- Ginger paste - 1 teaspoon
- Green chili - 1, finely chopped
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Eno fruit salt - 1 teaspoon
- Oil - 1 tablespoon (for greasing)
- Mustard seeds - 1 teaspoon
- Curry leaves - 8-10 leaves
- Coriander leaves - for garnish
Steps
- In a mixing bowl, combine besan, yogurt, water, ginger paste, chopped green chili, turmeric powder, and salt. Mix well to form a smooth batter.
- Add chopped methi leaves to the batter and mix gently.
- Let the batter rest for about 10 minutes.
- Grease a steaming tray or a round cake pan with oil.
- Just before steaming, add Eno fruit salt to the batter and mix quickly. The batter will become frothy.
- Pour the batter into the greased tray and spread it evenly.
- Steam in a steamer or a large pot with boiling water for about 15-20 minutes, or until a toothpick inserted comes out clean.
- Once done, remove from the steamer and let it cool for a few minutes before cutting into squares.
- For the tempering, heat oil in a small pan. Add mustard seeds and curry leaves, and let them crackle.
- Pour the tempering over the cut dhokla pieces and garnish with chopped coriander leaves.
