Ingredients

  • Besan (gram flour) - 1 cup
  • Fresh methi leaves (fenugreek) - 1/2 cup, chopped
  • Yogurt - 1/2 cup
  • Water - 1/2 cup
  • Ginger paste - 1 teaspoon
  • Green chili - 1, finely chopped
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Eno fruit salt - 1 teaspoon
  • Oil - 1 tablespoon (for greasing)
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8-10 leaves
  • Coriander leaves - for garnish

Steps

  1. In a mixing bowl, combine besan, yogurt, water, ginger paste, chopped green chili, turmeric powder, and salt. Mix well to form a smooth batter.
  2. Add chopped methi leaves to the batter and mix gently.
  3. Let the batter rest for about 10 minutes.
  4. Grease a steaming tray or a round cake pan with oil.
  5. Just before steaming, add Eno fruit salt to the batter and mix quickly. The batter will become frothy.
  6. Pour the batter into the greased tray and spread it evenly.
  7. Steam in a steamer or a large pot with boiling water for about 15-20 minutes, or until a toothpick inserted comes out clean.
  8. Once done, remove from the steamer and let it cool for a few minutes before cutting into squares.
  9. For the tempering, heat oil in a small pan. Add mustard seeds and curry leaves, and let them crackle.
  10. Pour the tempering over the cut dhokla pieces and garnish with chopped coriander leaves.
