- Fresh methi leaves (fenugreek) - 100 grams
- Rice - 150 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Oil - 1 tablespoon
- Water - 300 ml
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, bring 300 ml of water to a boil, add the soaked rice, and cook until tender, about 15-18 minutes. Drain and set aside.
- In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them sizzle.
- Add the chopped onion and sauté until golden brown, about 5 minutes.
- Stir in the grated ginger, minced garlic, and green chili, and cook for another minute until fragrant.
- Add the chopped tomato and cook until it softens, about 3-4 minutes.
- Add the fresh methi leaves and salt, and cook for another 5-7 minutes until the leaves wilt and flavors meld.
- Remove from heat, stir in lemon juice, and adjust salt if needed.
- To serve, place a portion of rice on a plate and top with the methi chutney.
