Ingredients

  • Basmati rice - 1 cup

  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Water - 2 cups
  • Cilantro - for garnish, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
  2. In a medium pot, heat the oil over medium heat. Add the cumin seeds and mustard seeds, allowing them to sizzle for about 30 seconds.
  3. Add the chopped onions and sauté until they turn translucent, about 3-4 minutes.
  4. Stir in the minced garlic, grated ginger, and slit green chili, cooking for another 1-2 minutes until fragrant.
  5. Add the chopped tomato and turmeric powder, cooking until the tomatoes soften, about 3-4 minutes.
  6. Fold in the chopped methi leaves and sauté for another 2 minutes until they wilt.
  7. Add the soaked and drained rice to the pot, stirring gently to combine with the spices and methi mixture.
  8. Pour in 2 cups of water and season with salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is cooked and water is absorbed.
  9. Fluff the rice with a fork and garnish with chopped cilantro before serving.
