- Flattened rice (poha) - 100 grams

- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/4 teaspoon
- Mustard seeds - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Salt - to taste
- Oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- Wash the fresh fenugreek leaves thoroughly and chop them coarsely.
- Rinse the flattened rice (poha) under running water for a few seconds until softened, then drain and set aside.
- In a pan, heat the oil over medium heat and add the mustard seeds. Once they start to splutter, add the cumin seeds.
- Add the chopped onion, green chili, and grated ginger to the pan. Sauté until the onions turn translucent.
- Stir in the chopped fenugreek leaves and cook for about 2-3 minutes until they wilt.
- Add the turmeric powder and salt, mixing well to combine all ingredients.
- Gently fold in the softened flattened rice and cook for another 2-3 minutes, allowing the flavors to meld.
- Remove from heat, drizzle with lemon juice, and garnish with fresh coriander leaves before serving.
