Methi Chole Rice

Ingredients
- Basmati rice - 1 cup
- Chickpeas (canned or cooked) - 1 cup
- Fresh methi (fenugreek) leaves - 1 cup, chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (cooking oil of choice) - 2 tablespoons
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another minute until fragrant.
- Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
- Incorporate the chickpeas and chopped methi leaves, mixing well. Cook for 3-4 minutes until the methi wilts.
- Add the soaked basmati rice to the pot and gently mix it with the chickpea and methi mixture.
- Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Once done, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Serve hot, garnished with fresh cilantro if desired.
