Ingredients

  • Basmati rice - 1 cup
  • Chickpeas (canned or cooked) - 1 cup
  • Fresh methi (fenugreek) leaves - 1 cup, chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (cooking oil of choice) - 2 tablespoons
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another minute until fragrant.
  5. Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften and the oil starts to separate.
  6. Incorporate the chickpeas and chopped methi leaves, mixing well. Cook for 3-4 minutes until the methi wilts.
  7. Add the soaked basmati rice to the pot and gently mix it with the chickpea and methi mixture.
  8. Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  9. Once done, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  10. Serve hot, garnished with fresh cilantro if desired.
