- Tomato - 1 medium, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Oil (vegetable or canola) - 2 tablespoons
- Cilantro - for garnish
Steps
- Heat oil in a pan over medium heat, then add cumin seeds and let them sizzle.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili; sauté for another 2 minutes.
- Add the chopped tomatoes and cook until they soften and the oil starts to separate.
- Mix in the coriander powder, garam masala, turmeric powder, red chili powder, and salt; cook for 1-2 minutes.
- Add the cooked chickpeas and a splash of water; stir well to combine all the spices with the chickpeas.
- Cover and simmer for 10 minutes on low heat, allowing the flavors to meld.
- Add the chopped methi leaves and cook for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
