Ingredients

  • Chickpeas (cooked) - 1 cup
  • Fresh fenugreek leaves (methi) - 1 cup, chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil (vegetable or canola) - 2 tablespoons
  • Cilantro - for garnish

Steps

  1. Heat oil in a pan over medium heat, then add cumin seeds and let them sizzle.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the grated ginger, minced garlic, and slit green chili; sauté for another 2 minutes.
  4. Add the chopped tomatoes and cook until they soften and the oil starts to separate.
  5. Mix in the coriander powder, garam masala, turmeric powder, red chili powder, and salt; cook for 1-2 minutes.
  6. Add the cooked chickpeas and a splash of water; stir well to combine all the spices with the chickpeas.
  7. Cover and simmer for 10 minutes on low heat, allowing the flavors to meld.
  8. Add the chopped methi leaves and cook for an additional 5 minutes.
  9. Garnish with fresh cilantro before serving.
