  • Tomato - 1 medium, chopped

  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro (for garnish) - a handful, chopped
  • Oil (cooking) - 2 tablespoons
  • Salt - to taste
  • Water - 1 cup

Steps

  1. Heat the oil in a pan over medium heat and add cumin seeds. Sauté until they start to crackle.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili; cook for another minute until fragrant.
  4. Add the chopped tomato and cook until it softens and starts to break down.
  5. Sprinkle in the turmeric powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  6. Add the cooked chickpeas and water; stir to combine. Bring to a gentle simmer.
  7. Add the fresh fenugreek leaves and garam masala. Mix well and let it cook for another 5-7 minutes, allowing the flavors to meld.
  8. Adjust seasoning as needed and garnish with chopped cilantro before serving.
