Ingredients

  • Chicken breast - 300 grams, cubed
  • Fresh methi (fenugreek) leaves - 50 grams, chopped
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cilantro (coriander leaves) - for garnish
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 400 milliliters

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pan, heat 2 tablespoons of cooking oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the finely sliced onion and sauté until golden brown.
  4. Stir in the ginger-garlic paste and green chilies, cooking for another 1-2 minutes until fragrant.
  5. Add the chopped tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomato is soft and oil separates from the mixture.
  6. Add the cubed chicken to the pan, stirring well to coat with the spice mixture. Cook for about 5-7 minutes until the chicken is no longer pink.
  7. Mix in the chopped methi leaves and garam masala, and cook for another 5 minutes until the chicken is fully cooked and the methi is wilted.
  8. In a separate pot, bring 400 milliliters of water to a boil. Drain the soaked rice and add it to the boiling water with a pinch of salt. Cook until the rice is tender and water is absorbed, about 10-12 minutes.
  9. Fluff the rice with a fork and serve it on plates, topped with the methi chicken. Garnish with chopped cilantro.
