Ingredients
- Chicken breast - 300 grams, cubed
- Fresh methi (fenugreek) leaves - 50 grams, chopped
- Basmati rice - 150 grams
- Onion - 1 medium, finely sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Green chilies - 1, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Cilantro (coriander leaves) - for garnish
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 400 milliliters
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pan, heat 2 tablespoons of cooking oil over medium heat. Add cumin seeds and let them splutter.
- Add the finely sliced onion and sauté until golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for another 1-2 minutes until fragrant.
- Add the chopped tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomato is soft and oil separates from the mixture.
- Add the cubed chicken to the pan, stirring well to coat with the spice mixture. Cook for about 5-7 minutes until the chicken is no longer pink.
- Mix in the chopped methi leaves and garam masala, and cook for another 5 minutes until the chicken is fully cooked and the methi is wilted.
- In a separate pot, bring 400 milliliters of water to a boil. Drain the soaked rice and add it to the boiling water with a pinch of salt. Cook until the rice is tender and water is absorbed, about 10-12 minutes.
- Fluff the rice with a fork and serve it on plates, topped with the methi chicken. Garnish with chopped cilantro.
