Ingredients

  • Chicken breast - 300 grams, diced
  • Fresh methi (fenugreek) leaves - 50 grams, chopped
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 400 milliliters
  • Coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat 2 tablespoons of cooking oil over medium heat and add 1 teaspoon of cumin seeds.
  3. Once the cumin seeds start to sizzle, add the chopped onion and sauté until golden brown.
  4. Add the ginger-garlic paste and slit green chili, and sauté for another 2 minutes until fragrant.
  5. Stir in the pureed tomato, turmeric powder, red chili powder, and salt. Cook for 5-7 minutes until the oil separates from the mixture.
  6. Add the diced chicken to the pot and cook until it turns white, about 5 minutes.
  7. Add the chopped methi leaves and stir well. Cook for another 5 minutes until the chicken is cooked through.
  8. Sprinkle the garam masala over the chicken curry and mix well. Remove from heat and set aside.
  9. In another pot, bring 400 milliliters of water to a boil. Drain the soaked rice and add it to the boiling water.
  10. Cook the rice uncovered for about 10-12 minutes until tender. Drain any excess water and fluff the rice with a fork.
  11. Serve the methi chicken curry over the rice, garnished with fresh coriander leaves.
