Ingredients
- Chicken breast - 300 grams, diced
- Fresh methi (fenugreek) leaves - 50 grams, chopped
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 400 milliliters
- Coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat 2 tablespoons of cooking oil over medium heat and add 1 teaspoon of cumin seeds.
- Once the cumin seeds start to sizzle, add the chopped onion and sauté until golden brown.
- Add the ginger-garlic paste and slit green chili, and sauté for another 2 minutes until fragrant.
- Stir in the pureed tomato, turmeric powder, red chili powder, and salt. Cook for 5-7 minutes until the oil separates from the mixture.
- Add the diced chicken to the pot and cook until it turns white, about 5 minutes.
- Add the chopped methi leaves and stir well. Cook for another 5 minutes until the chicken is cooked through.
- Sprinkle the garam masala over the chicken curry and mix well. Remove from heat and set aside.
- In another pot, bring 400 milliliters of water to a boil. Drain the soaked rice and add it to the boiling water.
- Cook the rice uncovered for about 10-12 minutes until tender. Drain any excess water and fluff the rice with a fork.
- Serve the methi chicken curry over the rice, garnished with fresh coriander leaves.
