Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Fresh methi leaves (fenugreek) - 100 grams, washed and chopped
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the ginger-garlic paste and green chili, cooking for another 2 minutes until fragrant.
  4. Add the chopped tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and the oil separates.
  5. Add the chicken pieces to the pan, mixing well to coat them with the spices. Cook for 5 minutes until the chicken is no longer pink.
  6. Stir in the chopped methi leaves and cover the pan. Cook on low heat for about 10-12 minutes, or until the chicken is cooked through and tender.
  7. Sprinkle garam masala over the dish, mix well, and cook for an additional 2 minutes.
  8. Garnish with fresh cilantro before serving.
