Ingredients

  • Fresh methi (fenugreek leaves) - 200 grams
  • Firm tofu - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coconut milk - 150 ml
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the methi leaves thoroughly and chop them coarsely. Set aside.
  2. Drain the tofu and cut it into small cubes. Heat 1 tablespoon of oil in a pan over medium heat, and lightly fry the tofu cubes until golden brown. Remove and set aside.
  3. In the same pan, add the remaining oil and cumin seeds. Once the seeds start to splutter, add the chopped onions and sauté until they turn translucent.
  4. Add the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until aromatic.
  5. Stir in the pureed tomato, turmeric powder, coriander powder, and salt. Cook until the oil separates from the mixture, about 5-7 minutes.
  6. Add the chopped methi leaves and cook for 3-4 minutes until wilted.
  7. Pour in the coconut milk, and bring the mixture to a gentle simmer. Add the fried tofu cubes and garam masala. Stir gently to combine and cook for an additional 5 minutes.
  8. Remove from heat and garnish with fresh coriander leaves before serving.
