Ingredients
- Fresh methi (fenugreek leaves) - 200 grams
- Firm tofu - 200 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Coconut milk - 150 ml
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Wash the methi leaves thoroughly and chop them coarsely. Set aside.
- Drain the tofu and cut it into small cubes. Heat 1 tablespoon of oil in a pan over medium heat, and lightly fry the tofu cubes until golden brown. Remove and set aside.
- In the same pan, add the remaining oil and cumin seeds. Once the seeds start to splutter, add the chopped onions and sauté until they turn translucent.
- Add the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until aromatic.
- Stir in the pureed tomato, turmeric powder, coriander powder, and salt. Cook until the oil separates from the mixture, about 5-7 minutes.
- Add the chopped methi leaves and cook for 3-4 minutes until wilted.
- Pour in the coconut milk, and bring the mixture to a gentle simmer. Add the fried tofu cubes and garam masala. Stir gently to combine and cook for an additional 5 minutes.
- Remove from heat and garnish with fresh coriander leaves before serving.
