Ingredients

  • Fresh fenugreek leaves - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Salt - to taste
  • Oil - 1 tablespoon

Steps

  1. Wash the fresh fenugreek leaves thoroughly and chop them coarsely.
  2. In a pan, heat 1 tablespoon of oil over medium heat.
  3. Add 1/2 teaspoon of cumin seeds and 1/2 teaspoon of mustard seeds to the hot oil and let them crackle.
  4. Add the finely chopped onion to the pan and sauté until it becomes translucent.
  5. Stir in the minced garlic, grated ginger, and slit green chili, cooking for another minute until fragrant.
  6. Add the chopped tomato and cook until it softens, about 2-3 minutes.
  7. Sprinkle in 1/2 teaspoon of turmeric powder and salt to taste, mixing well.
  8. Add the chopped fenugreek leaves to the pan, and stir-fry for about 5-7 minutes until they wilt down and are cooked through.
  9. Taste and adjust seasoning if necessary, then remove from heat.
  10. Serve hot as a side dish with roti or rice.
