- Potatoes (boiled and mashed) - 300 grams
- Fresh methi (fenugreek leaves) - 50 grams
- Chickpea flour (besan) - 50 grams
- Onion (finely chopped) - 1 medium
- Green chili (finely chopped) - 1
- Ginger-garlic paste - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (for frying) - 3 tablespoons
- Tomato puree - 150 grams
- Turmeric powder - 1/2 teaspoon
- Water - 200 ml
- Cilantro (for garnish) - a handful
Steps
- In a mixing bowl, combine the boiled and mashed potatoes with chopped methi, chickpea flour, onion, green chili, ginger-garlic paste, cumin seeds, coriander powder, garam masala, and salt. Mix well until a smooth dough forms.
- Divide the mixture into equal portions and shape them into round patties (tikkis).
- Heat oil in a frying pan over medium heat. Once hot, fry the tikkis until golden brown and crispy on both sides. Remove and set aside on a paper towel to drain excess oil.
- In the same pan, add a bit more oil if needed, and sauté the remaining onions until translucent. Add turmeric powder and tomato puree, cooking for about 5 minutes until the oil separates.
- Add water to the pan and bring the mixture to a gentle simmer. Let it cook for about 10 minutes, adjusting salt to taste.
- Gently place the fried tikkis into the curry and let them soak for about 5 minutes.
- Garnish with chopped cilantro and serve hot with rice or naan.
