Ingredients

  • Potatoes - 300 grams
  • Fresh methi (fenugreek) leaves - 50 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Rice flour - 2 tablespoons
  • Oil - for shallow frying

Steps

  1. Boil the potatoes until tender, then peel and mash them in a mixing bowl.
  2. Wash the methi leaves thoroughly, chop them finely, and add to the mashed potatoes.
  3. In the same bowl, add chopped onion, green chili, grated ginger, cumin seeds, coriander powder, garam masala, and salt. Mix well to combine all the ingredients.
  4. Add rice flour to the mixture to bind it and make it easier to shape the tikkis. Mix until the mixture holds together.
  5. Divide the mixture into equal portions and shape each portion into a round patty (tikki).
  6. Heat oil in a frying pan over medium heat. Once hot, carefully place the tikkis in the pan.
  7. Fry the tikkis for about 4-5 minutes on each side, or until they are golden brown and crispy.
  8. Once cooked, remove the tikkis from the pan and place them on paper towels to absorb excess oil.
  9. Serve hot with mint chutney or yogurt dip.
