Ingredients

  • Fresh methi leaves - 100 grams
  • Potatoes - 2 medium (about 300 grams)
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Water - 1/4 cup

Steps

  1. Wash the methi leaves thoroughly and chop them coarsely. Peel and chop the potatoes into small cubes.
  2. In a pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onion and sauté until it turns golden brown.
  4. Stir in the grated ginger and green chili, cooking for another minute.
  5. Add the chopped tomato and cook until it softens and releases its juices.
  6. Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes.
  7. Add the chopped potatoes and mix to coat them in the spice mixture. Cook for about 5 minutes, stirring occasionally.
  8. Add the methi leaves and water, cover the pan, and let it simmer for about 10-12 minutes, or until the potatoes are cooked through.
  9. Once the potatoes are tender, sprinkle garam masala over the dish and mix gently. Cook for another minute.
  10. Remove from heat and serve hot with roti or rice.
