- Fresh methi leaves - 100 grams
- Potatoes - 2 medium (about 300 grams)
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 1/4 cup
Steps
- Wash the methi leaves thoroughly and chop them coarsely. Peel and chop the potatoes into small cubes.
- In a pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion and sauté until it turns golden brown.
- Stir in the grated ginger and green chili, cooking for another minute.
- Add the chopped tomato and cook until it softens and releases its juices.
- Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes.
- Add the chopped potatoes and mix to coat them in the spice mixture. Cook for about 5 minutes, stirring occasionally.
- Add the methi leaves and water, cover the pan, and let it simmer for about 10-12 minutes, or until the potatoes are cooked through.
- Once the potatoes are tender, sprinkle garam masala over the dish and mix gently. Cook for another minute.
- Remove from heat and serve hot with roti or rice.
