Ingredients

  • Fenugreek leaves (methi) - 100 grams, chopped
  • Potatoes - 200 grams, boiled and mashed
  • Cauliflower - 100 grams, grated
  • Chickpea flour (besan) - 50 grams
  • Green chilies - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - for shallow frying
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the boiled and mashed potatoes, grated cauliflower, and chopped fenugreek leaves.
  2. Add chickpea flour, green chilies, grated ginger, cumin seeds, turmeric powder, red chili powder, salt, chopped coriander leaves, and lemon juice to the mixture. Mix everything well until a dough forms.
  3. Divide the mixture into equal portions and shape them into flat patties (tikkis).
  4. Heat oil in a non-stick pan over medium heat. Once hot, carefully place the tikkis in the pan.
  5. Fry the tikkis for about 4-5 minutes on each side or until they are golden brown and crispy.
  6. Remove the tikkis from the pan and place them on a paper towel to absorb excess oil.
  7. Serve hot with mint chutney or yogurt dip.
