- Fenugreek leaves (methi) - 100 grams, chopped
- Potatoes - 200 grams, boiled and mashed
- Cauliflower - 100 grams, grated
- Chickpea flour (besan) - 50 grams
- Green chilies - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Oil - for shallow frying
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine the boiled and mashed potatoes, grated cauliflower, and chopped fenugreek leaves.
- Add chickpea flour, green chilies, grated ginger, cumin seeds, turmeric powder, red chili powder, salt, chopped coriander leaves, and lemon juice to the mixture. Mix everything well until a dough forms.
- Divide the mixture into equal portions and shape them into flat patties (tikkis).
- Heat oil in a non-stick pan over medium heat. Once hot, carefully place the tikkis in the pan.
- Fry the tikkis for about 4-5 minutes on each side or until they are golden brown and crispy.
- Remove the tikkis from the pan and place them on a paper towel to absorb excess oil.
- Serve hot with mint chutney or yogurt dip.
