Ingredients

  • Fresh methi (fenugreek leaves) - 100 grams
  • Potatoes - 200 grams, diced
  • Cauliflower - 150 grams, florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 inch piece, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Water - 100 ml
  • Cilantro - for garnish, chopped

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the ginger, garlic, and green chili. Sauté for another 1-2 minutes until fragrant.
  4. Add the diced potatoes and cauliflower florets. Mix well and cook for about 5 minutes, stirring occasionally.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix thoroughly to coat the vegetables with spices.
  6. Add chopped tomatoes and cook until they soften, around 3-4 minutes.
  7. Pour in water, cover the pan, and let it simmer for 10 minutes until the vegetables are tender.
  8. Once the vegetables are cooked, add the fresh methi leaves and garam masala. Stir well and cook for an additional 2-3 minutes.
  9. Remove from heat and garnish with chopped cilantro before serving.
