- Fresh methi (fenugreek leaves) - 100 grams
- Potatoes - 200 grams, diced
- Cauliflower - 150 grams, florets
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 inch piece, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 100 ml
- Cilantro - for garnish, chopped
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the ginger, garlic, and green chili. Sauté for another 1-2 minutes until fragrant.
- Add the diced potatoes and cauliflower florets. Mix well and cook for about 5 minutes, stirring occasionally.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix thoroughly to coat the vegetables with spices.
- Add chopped tomatoes and cook until they soften, around 3-4 minutes.
- Pour in water, cover the pan, and let it simmer for 10 minutes until the vegetables are tender.
- Once the vegetables are cooked, add the fresh methi leaves and garam masala. Stir well and cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped cilantro before serving.
