- Fresh methi (fenugreek) leaves - 100 grams, chopped
- Potato - 200 grams, diced
- Cauliflower - 200 grams, cut into florets
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the ginger, garlic, and green chili. Cook for 1-2 minutes until fragrant.
- Add the diced potatoes and cauliflower florets. Sauté for about 5 minutes, stirring occasionally.
- Sprinkle in turmeric powder, coriander powder, and salt. Mix well to coat the vegetables.
- Add the chopped tomato and cook until it softens, about 3-4 minutes.
- Cover the pan and cook on low heat for 10-12 minutes until the vegetables are tender, stirring occasionally.
- Once cooked, add the chopped methi leaves and garam masala. Mix well and cook for an additional 2-3 minutes.
- Garnish with fresh coriander leaves before serving.
