Ingredients

  • Fresh methi (fenugreek) leaves - 100 grams, chopped
  • Potato - 200 grams, diced
  • Cauliflower - 200 grams, cut into florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Stir in the ginger, garlic, and green chili. Cook for 1-2 minutes until fragrant.
  4. Add the diced potatoes and cauliflower florets. Sauté for about 5 minutes, stirring occasionally.
  5. Sprinkle in turmeric powder, coriander powder, and salt. Mix well to coat the vegetables.
  6. Add the chopped tomato and cook until it softens, about 3-4 minutes.
  7. Cover the pan and cook on low heat for 10-12 minutes until the vegetables are tender, stirring occasionally.
  8. Once cooked, add the chopped methi leaves and garam masala. Mix well and cook for an additional 2-3 minutes.
  9. Garnish with fresh coriander leaves before serving.
