Medu Vada
Medu Vada is a popular South Indian snack made from urad dal (black gram) batter, shaped into doughnut-like fritters and deep-fried until golden brown. These crispy and fluffy vadas are often enjoyed with coconut chutney or sambar, making them a delightful treat.

Ingredients
- Urad dal (split black gram) - 1 cup
- Water - 1/2 cup (for soaking)
- Onion - 1 small, finely chopped
- Green chilies - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Curry leaves - 5-6, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Oil - for deep frying
Steps
- Rinse the urad dal thoroughly under running water and soak it in 1/2 cup of water for at least 4 hours or overnight.
- After soaking, drain the urad dal and transfer it to a blender. Blend into a smooth batter, adding a little water if necessary to achieve a thick consistency.
- Transfer the batter to a mixing bowl and add chopped onion, green chilies, ginger, curry leaves, salt, and black pepper. Mix well until all ingredients are combined.
- Heat oil in a deep frying pan over medium heat. To check if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Wet your hands and take a small portion of the batter (about 2 tablespoons). Shape it into a doughnut by making a hole in the center.
- Carefully slide the shaped vada into the hot oil. Fry in batches, ensuring not to overcrowd the pan, and cook until they are golden brown on all sides, about 3-4 minutes.
- Once cooked, remove the vadas from the oil and place them on paper towels to drain excess oil.
- Serve hot with coconut chutney or sambar.
