Ingredients

  • All-purpose flour - 100 grams
  • Semolina - 30 grams
  • Caraway seeds (ajwain) - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper powder - 1/4 teaspoon
  • Carom seeds - 1/2 teaspoon
  • Vegetable oil - 30 ml (for dough)
  • Water - 50 ml (or as needed)
  • Vegetable oil - for deep frying

Steps

  1. In a mixing bowl, combine all-purpose flour, semolina, caraway seeds, cumin seeds, salt, black pepper powder, and carom seeds.
  2. Add 30 ml of vegetable oil to the dry ingredients and mix well using your fingers until the mixture resembles coarse crumbs.
  3. Gradually add water, a little at a time, and knead into a stiff dough. Cover with a damp cloth and let it rest for 15 minutes.
  4. After resting, divide the dough into small balls (about 20 grams each) and roll each ball into a small disc, about 5 cm in diameter.
  5. Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully slide in the rolled discs, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the fried Mathri and drain on paper towels to absorb excess oil. Allow to cool slightly before serving.
