- All-purpose flour - 100 grams
- Semolina - 30 grams
- Caraway seeds (ajwain) - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper powder - 1/4 teaspoon
- Carom seeds - 1/2 teaspoon
- Vegetable oil - 30 ml (for dough)
- Water - 50 ml (or as needed)
- Vegetable oil - for deep frying
Steps
- In a mixing bowl, combine all-purpose flour, semolina, caraway seeds, cumin seeds, salt, black pepper powder, and carom seeds.
- Add 30 ml of vegetable oil to the dry ingredients and mix well using your fingers until the mixture resembles coarse crumbs.
- Gradually add water, a little at a time, and knead into a stiff dough. Cover with a damp cloth and let it rest for 15 minutes.
- After resting, divide the dough into small balls (about 20 grams each) and roll each ball into a small disc, about 5 cm in diameter.
- Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully slide in the rolled discs, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the fried Mathri and drain on paper towels to absorb excess oil. Allow to cool slightly before serving.
