- Masoor dal (red lentils) - 100 grams
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red onion - 1 small, finely chopped
- Carrot - 1 medium, grated
- Cilantro (coriander leaves) - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Cumin powder - 1/2 teaspoon
- Chili powder - 1/4 teaspoon (optional)
Steps
- Rinse the masoor dal under cold water until the water runs clear.
- In a pot, add the rinsed dal and 300 ml of water. Bring it to a boil, then reduce to a simmer and cook for about 15-20 minutes, or until the lentils are tender but not mushy.
- Once cooked, drain any excess water and let the lentils cool to room temperature.
- In a large mixing bowl, combine the cooled masoor dal, diced cucumber, diced tomato, finely chopped red onion, grated carrot, and chopped cilantro.
- In a small bowl, whisk together lemon juice, olive oil, salt, black pepper, cumin powder, and chili powder (if using).
- Pour the dressing over the salad and toss gently to combine all ingredients evenly.
- Taste and adjust seasoning if necessary. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
