- Masoor dal (red lentils) - 100 grams
- Water - 500 ml
- Coconut milk - 200 ml
- Jaggery (grated) - 50 grams
- Cardamom powder - 1/2 teaspoon
- Vanilla extract - 1/2 teaspoon
- Chopped nuts (almonds, cashews) - 30 grams
- Salt - a pinch
- Ghee (clarified butter) - 1 tablespoon
Steps
- Rinse the masoor dal under cold water until the water runs clear.
- In a pot, combine the rinsed masoor dal and 500 ml of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the lentils are soft.
- Drain any excess water and transfer the cooked dal to a blender. Add coconut milk, jaggery, cardamom powder, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
- In a pan, heat ghee over medium heat. Pour in the blended mixture and cook for an additional 5-7 minutes, stirring continuously to prevent sticking.
- Once it thickens to a pudding-like consistency, remove from heat. Stir in chopped nuts for added texture.
- Let the pudding cool slightly before serving. You can enjoy it warm or chilled, garnished with more chopped nuts if desired.
