Ingredients

  • Masoor dal (red lentils) - 100 grams
  • Water - 500 ml
  • Coconut milk - 200 ml
  • Jaggery (grated) - 50 grams
  • Cardamom powder - 1/2 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Chopped nuts (almonds, cashews) - 30 grams
  • Salt - a pinch
  • Ghee (clarified butter) - 1 tablespoon

Steps

  1. Rinse the masoor dal under cold water until the water runs clear.
  2. In a pot, combine the rinsed masoor dal and 500 ml of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the lentils are soft.
  3. Drain any excess water and transfer the cooked dal to a blender. Add coconut milk, jaggery, cardamom powder, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  4. In a pan, heat ghee over medium heat. Pour in the blended mixture and cook for an additional 5-7 minutes, stirring continuously to prevent sticking.
  5. Once it thickens to a pudding-like consistency, remove from heat. Stir in chopped nuts for added texture.
  6. Let the pudding cool slightly before serving. You can enjoy it warm or chilled, garnished with more chopped nuts if desired.
