Ingredients

  • Red lentils (masoor dal) - 100 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Baking soda - a pinch
  • Water - as needed
  • Oil - for deep frying

Steps

  1. Rinse the red lentils thoroughly under running water and soak them in water for 2-3 hours.
  2. After soaking, drain the lentils and blend them into a smooth batter, adding just enough water to achieve a thick consistency.
  3. In a mixing bowl, combine the lentil batter with chopped onion, green chili, ginger, garlic, coriander leaves, cumin seeds, turmeric powder, red chili powder, salt, and a pinch of baking soda. Mix well until all ingredients are evenly incorporated.
  4. Heat oil in a deep frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil, frying a few at a time to avoid overcrowding.
  5. Fry the pakoras until they are golden brown and crispy on all sides, about 3-4 minutes. Remove them with a slotted spoon and drain on paper towels.
  6. Serve hot with green chutney or ketchup.
