- Red lentils (masoor dal) - 100 grams
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Coriander leaves - 2 tablespoons, chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Baking soda - a pinch
- Water - as needed
- Oil - for deep frying
Steps
- Rinse the red lentils thoroughly under running water and soak them in water for 2-3 hours.
- After soaking, drain the lentils and blend them into a smooth batter, adding just enough water to achieve a thick consistency.
- In a mixing bowl, combine the lentil batter with chopped onion, green chili, ginger, garlic, coriander leaves, cumin seeds, turmeric powder, red chili powder, salt, and a pinch of baking soda. Mix well until all ingredients are evenly incorporated.
- Heat oil in a deep frying pan over medium heat. Once hot, drop spoonfuls of the batter into the oil, frying a few at a time to avoid overcrowding.
- Fry the pakoras until they are golden brown and crispy on all sides, about 3-4 minutes. Remove them with a slotted spoon and drain on paper towels.
- Serve hot with green chutney or ketchup.
