- Masoor dal (red lentils) - 100 grams
- Ghee - 30 grams
- Almond milk (unsweetened) - 200 ml
- Erythritol (or preferred low-carb sweetener) - 4 tablespoons
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (almonds and pistachios) - 2 tablespoons
- Saffron strands - a pinch
- Vanilla extract - 1/2 teaspoon
Steps
- Rinse the masoor dal under cold water until the water runs clear, then soak it in water for 30 minutes.
- Drain the soaked dal and blend it with almond milk until smooth, adding a little more almond milk if necessary.
- In a non-stick pan, heat the ghee over medium heat and add the blended dal mixture.
- Stir continuously for about 10-15 minutes until the mixture thickens and starts to leave the sides of the pan.
- Add erythritol, cardamom powder, saffron strands, and vanilla extract to the mixture, stirring well to combine.
- Cook for an additional 5-10 minutes on low heat until the halwa is well combined and aromatic.
- Garnish with chopped nuts before serving.
