Ingredients

  • Zucchini - 2 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon

Steps

  1. Wash and slice the zucchini into thick rounds or half-moons, about 1 cm thick.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Add cumin seeds and mustard seeds to the hot oil and sauté until they start to splutter (about 30 seconds).
  4. Add turmeric powder and red chili powder to the pan, stirring quickly to avoid burning the spices.
  5. Add the sliced zucchini to the pan, sprinkle with salt, and toss to coat the zucchini in the spices.
  6. Cook the zucchini for about 8-10 minutes, stirring occasionally, until they are tender but still crisp.
  7. Sprinkle garam masala over the cooked zucchini and mix well.
  8. Remove from heat, add fresh coriander leaves and lemon juice, and stir to combine.
  9. Serve hot as a side dish or main dish with a protein of your choice.
